月曜は週の始まりだ。この日が来るといつも憂鬱になるが、週末の楽しいプランを考えつつ、頑張って仕事をします。
Monday is the first day of the week. Whenever the day comes, I feel blue. But I am going to work hard while thinking about some nice plans for the weekend.
1) 「気が滅入る」を「憂鬱になる」と置き換えられているところ、良いですね♪
英文も、分かりやすく表現することが出来ました♪ Well done!

2) 父は会社で働いているが副業でカフェも所有していて、そちらの方が楽しそうだ。

2) 文意が正確に捉えられた置き換えになっていますね♪
置き換えの時点で「副業」の意味合いが残せると、英語表現が更にクリアになりそうです ^^
「副業」は「もうひとつの仕事」と置き換えて、表現を考えてみましょう☆
seems や happier than のフレーズで表現されているところ、とても良いです♪

He proposed to her, but it was too long and hard to understand. So she had no idea what he wanted to say. He had to propose to her again.
